Carrot butter, even better!

Yeah, so today for breakfast this happened:

(Like how I dropped that on you like it was no biggie? Yeah, thought you might! lol) So it’s carrot butter, only I tweaked the recipe because I can not get down with anything that dings my calorie bank as much as this would have. Let’s talk about that, should we?

Original ingredients:

  • 6-7 medium/large carrots (you have to weigh yours to know how many calories)
  • 1/2 cup canola or safflower oil (960 calories)
  • 3/4 cup macadamia nuts (630 calories)
  • 2 Tbsp maple syrup (104-125 calories)
  • 1/2 Tbsp vanilla extract
  • 1/2 Tbsp salt

New and improved ingredient list:

  • 6-7 medium/large carrots (you have to weight to know the calories which is why that notebook rocks!)
  • 3/4 cup macadamia nuts (630 calories)
  • 2 Tbsp sugar free syrup (10-15 calories depending on your brand)
  • 1/2 Tbsp vanilla extract

That’s right I left out the oil all together, the nuts added plenty! I also left out the salt because in my opinion the sugar free syrup isn’t as potent as the maple and the salt isn’t needed!

Boil your carrots for two hours, strain and toss into your food processor or blender with all the ingredients. Because I am not dealing with a crazy professional blender (I use a Ninja) I soaked my nuts over night (the cool thing about this was it not only softened them so the were easily creamed by my ninja, but when I strained them I noticed a lot of the oils had separated from them (so my calories count is probably a little high!) Blend until creamy and then throw in the fridge. I noted that it wasn’t very sweet at all, nor really salty, once done. I’m glad I didn’t mess with it though because after chilling in the fridge the sweet flavor is more apparent. Still for my wife I drizzled a teaspoon of honey over the spread.

BTW, if you want to do it the other way the prep and cooking is the same you just add all the other stuff. I can’t imagine how oily it is with that, I mean the stuff I made is plenty with the nuts! Also, if you want to figure your calories (or any nutritional info) you write down the complete amount of each ingredient and add it all together (lets say you get 1000 calories for all your ingredients) after you have made your dish you weigh your empty container (25 grams) and then put the food inside of it, reweigh this (1025 grams) and subtract the weight of the container (1000 grams), you now know that you have 1000 calories in 1000 grams of whatever dish. Divide by servings, lets say 10 in this example 1000 grams divided in to 10 servings gives you ten 100 gram servings and you divide the calories as well, each serving it 100 calories. Gosh, I hope that helped. All I got was a headache! lol

    I bet you could thin it down with some veggie broth and make some kind of soup using the general idea…
