Crust-less Mini Breakfast Quiche, or Breakfast Egg Cups

Breakfast in this little world o’mine is getting fancy, my peeps! I attacked with a real, “Eh, let’s bang around until something yummy happens!” Oh, my goodness, good yummy things happened!

Ingredients: (I was making a half dozen, so you can multiply or divide as you would like to suit your own needs.)

  • 6 eggs (if small) – 5 eggs (if you use medium)
  • 3-4 cups fresh spinach
  • 1 1/2 cup shredded cheese (I used cheddar in this batch, I have also made it with a three cheese blend and it was amazing!)
  • 16 oz. breakfast sausage

Preheat the oven to 450^ – Cook up your breakfast sausage and crumble it into smallish bits, drain if needed (I use fat free sausage so it doesn’t cook up real greasy) and place to the side. In a large bowl (high sides) crack your eggs into the bowl and whip them up good. Once they are beat up real good add cooked sausage and your fresh spinach cup by cup, ripping it into smaller pieces as you go. Stir well. Finally fold in your cheese. Scoop the filling into your cupcake tin. (I use a silicone set and spray each cup. I also use a 3/4 cup measuring cup to scoop.) You should fill either flat at the top or slightly full. If you have extra try pouring it over your cups and keeping it as in the middle of each egg cup. Place on the middle rack and cook for 25 minutes – until you can insert a knife in and pull it out clean. Enjoy!

I also made a “light” version with the following ingredients:

  • 6 egg whites
  • 4 cups fresh spinach
  • 1 cup cheese (light or normal, I used cheddar and it was 90 calories)
  • 2 servings meatless crumbles (precooked)

Everything else stays the same!

I cool them completely and then store them in a large Rubbermaid in the fridge, so that I can hand out one with toast or pack two in the morning for my wife to warm up and have breakfast at work. The reason I only do six at a time is to keep them as fresh as possible!
